九月至十月都是吃crabs的季節,早前有朋友極力推薦這間《FreshLodge》,除了好吃之外重要的是crabs從荷蘭進口,而且所有批次也經荷蘭當局的品質檢定,確定適合食用才運抵香港。
個人覺得《FreshLodge》的crab黃確實比以往所吃的多,而且色澤鮮明。隨crabs附有Ginger、Perilla Leaves、crab tool sets、crab vinegar,另有一張教授如何煮食的說明,對於初次烹調的我而言很是有用,原來保存Chinese Mitten Crabs的方法有分「短時間內煮食」與「長時間後煮食」兩種:「短時間內煮食」的方法很簡單,只需要把crabs放在陰涼處即可;而「長時間後煮食」必須用濕毛巾鋪在crabs上,然後放在雪櫃的水果蔬菜格內便可,但要經常更換濕毛巾,以保持足夠的濕度,同時溫度亦要保持在攝氏約五度左右。另外Chinese Mitten Crabs有四個部分是不能吃的,包括:胃、心、腸及腮。
Mitten Crab Steaming Method:
1. Wash the crabs thoroughly and do not untie the cotton tape from the crabs.
2. Put a few pieces of herb leaves into a work, add some water and boil it.
3. After the water is boiled, steam the cleaned crabs with its belly face up for 15 - 20 minutes.
4. Serve the crabs with prepared sauce, which can be made by adding some ginger slices and brown sugar into the back vinegar.
